Baked Italian Meatballs In Home made Sauce

This is a fan favorite at our Sunday family gatherings, pared with fresh pasta

Ingredients:
1 lb. ground beef & 1 lb. ground pork mixed together.
½ cup Italian style breadcrumbs
½ cup milk
2 large eggs
¼ cup grated parmesan
1 tsp dried oregano
1 tbsp dried parsley
1 tbsp of black truffle oil or 2 tbsp minced garlic
1 tbsp olive oil
Salt & pepper to taste
Sauce:
2 28ozs of tomato puree
2 whole carrots
1 tsp of each: parsley, basil, salt, pepper
1 tbsp olive oil
A pinche of crushed chili pepper
¼ cup of red cooking wine
Instructions for meatballs:
1. In a large bowl, mix the ingredients for the meatballs.
2. Cover a baking sheet with parchment paper.
3. Using a 2-inch meat baller (see picture below), and a tall glass of water, fill it will the meat mixture. Remove from the meat baller and finish rolling the meatball. Place it onto the prepared pan. Dunk the meat baller into the glass of water before forming the next meatball. (if you do not have a meat baller, use wet hands to form the meatballs.
4. Bake in a preheated oven at 400 degrees for 20 to 25 minutes. (they will not be fully cook through at this point. They will finish cooking in the meat sauce. This will keep them more tender.
5. Add the meatballs to the prepared pasta sauce and simmer for 2 to 3 hours.
Instructions for Sauce:
Add all the sauce ingredients to a large saucepan. Bring to a boil on the stove top and turn down to simmer.
Add the baked meatballs to the sauce.
