Chicken Tikkas with Cilantro Mint Chutney

Chicken Ingredients:

1 lb. of chicken thighs (skinless & boneless) cubed

½ cup of plain whole-milk Greek yogurt

1 tbsp of freshly squeezed lime juice

1 tsp of ginger paste

¾ tsp garam masala

½ tsp salt

¼ tsp cayenne

Chutney Ingredients:

2 cups of fresh cilantro leaves, chopped

1 cup of mint leaves, chopped

½ cup of onion, chopped

1 tbsp of freshly squeezed lime juice

1 serrano, seeded & chopped

¼ tsp salt

1 avocado finely chopped

¼ cup of light sour cream

Chicken Directions:

In a gallon freezer bag add all ingredients, then add the chicken to coat.  Marinate in the fridge for 1 hour.

Prepare the grill to medium-high heat.  Place a roasting tray on the grill and add the marinate chicken to it once the grill is hot cooking on all sides (about 5 to 7 minutes or until internal temp. reaches 165 degrees).

Chutney Directions:

While the chicken is marinating, puree all the ingredients until smooth.

Serve the chicken warm and spoon some of the chutney over the chicken.  Add your favorite side dish.
