Cod Fish Tacos with Cabbage Slaw

Sauce Ingredients:
½ mayonnaise
½ light sour cream
2 tbsp of lime juice
1 tbsp of seeded, chopped jalapeno
1 tomato seeded & chopped
1 tbsp of Dijon Mustard
Sauce Directions:
Puree the sauce ingredients in a blender until smooth. Refrigerate until ready to use.
Cabbage Slaw Ingredients:
1 pkg of angel hair cabbage
½ cup of white wine vinegar
¼ cup of olive oil
1 cup of minced fresh Italian parsley
2 tbsps. of dry mustard
Salt & pepper to taste
Cabbage Slaw Directions:
Place cabbage in a large bowl and add remaining ingredients. Stir until well combined. Place in the fridge until ready to use.
Fish Ingredients & directions:
Buy high quality frozen, beer battered Alaskan Cod and cook according to the directions.
Spray cooking oil In a large skillet. On medium heat, cook each 7” tortillas about 1 minute per side. Remove to a plate and keep warm until ready to assemble the taco.
Assembly:
Place desired number of cod in each tortilla. Top with slaw followed by the sauce. Serve.
