Rubbed Spatchcocked Chicken

Ingredients:
1 whole chicken (3-4 lbs.)
Olive oil
Old Bay seasoning
Directions:
Pre-heat oven to 425 degrees.
Spatchcock the chicken using heavy kitchen scissor to cut out the backbone and discard it.
Open the chicken so it lies flat on a prepared cookie sheet topped with a grate.
Rub or brush olive oil open the open side and sprinkle the Old Bay seasoning to lightly cover the chicken surface.
Turn the chicken over so that the breasts are facing up. Repeat the process above with the olive oil and seasoning.
Roast the chicken until a thermometer reaches 165 degrees in the thickest part of the chicken thigh. Remove it from the oven and let it rest for 10 minutes before serving.
Serve with your choice of potato and hot BBQ sauce.
