Slow Cooker Apple Cider Pork Shoulder

Ingredients:
4-5 lb. boneless pork shoulder roast
2 tbsps. of olive oil
2 cups of fresh apple cider
2 cups chicken stock or broth
2 tbsps. Dijon mustard
1 tbsp dehydrated minced onion
3 rosemary sprigs
4 thyme sprigs
1 red onion, cut into think slices
2 green apples peeled and cut into wedges
Salt & pepper to taste
Directions:
Turn Slow cooker on high.
Start by trimming the pork of excess fat. Cut the pork into 4 large pieces.
Pat the pork pieces dry with a paper towel and season with salt & pepper to taste.
Heat the oil in a large slow cooker on high heat. Place the pork pieces in the slow cooker.
While the pork is cooking, whisk together the cider, chicken broth, Dijon, and dehydrated minced onion together and add to the slow cooker. Use kitchen twine to tie the rosemary and thyme together in a small bundle.
Arrange the herbs over the pork. Add the apples, salt and pepper.
Cook on high for 4-5 hours. Place the pork in a large serving platter topped with juices, apples and onions.
