Slowcooker Coq au Vin

Ingredients:
4 lbs. of boneless, skinless chicken (a mixture of things, breasts and chicken tenders)
10 ozs of frozen pearl onions
1 lb. of mushrooms brushed clean and thickly sliced
1 750ml red wine
1 tsp of powdered thyme
2 bay leaves
2 tbsp of finely chopped parsley
1 tsp of salt
1 tsp of black pepper
¼ cup of cornstarch dissolved in cold water
Directions:
Add all of the above ingredients except the cornstarch to a slow cooker and cook on high for 4 hours.
Add in the cornstarch mixture to the slow cooker 30 minutes before the end of the cooking cycle to allow it to thicken.
Serve warm and enjoy!
