Balsamic Glazed Salmon

Ingredients:
Glaze
½ cup balsamic vinegar
¼ cup white wine
2 tbsp honey
1 tbsp Dijon mustard
1 rosemary sprig
2 tsp black truffle oil
Salmon
4 salmon fillets
Salt & pepper to taste
1 tbsp olive oil
Instructions:
Remove salmon from the fridge 15 to 20 minutes ahead of cooking. Meanwhile, in a small saucepan combine the glaze ingredients.
Heat over med-high heat to bring to a boil, then reduce to a simmer (med-low) until sauce thickens and is reduced to about 1/3 cup (15-20 mins), stirring occasionally. Reduce to low while starting to cook the salmon.
Season both sides of the salmon with salt and pepper. Heat a non-stick skillet over med-high heat. Add the salmon fillets and cook for 3 minutes. Turn the fillets over in the pan and cook another 3 minutes or until salmon is cooked through.
Drizzle each fillet with the balsamic glaze. Serve with your favorite vegetable.
