Date & Pecan Pinwheel Cookies

Updated: Apr 19

These make for a great holiday cookie! This recipe is a slight variation a friends' (Alix) grandmothers' cookies made traditionally during the holidays.

A very delicate cookie that melts in your mouth.

Ingredients:

1/2 cup of butter

2 cups of brown sugar

3 eggs

4 ½ cups of flour

1 tsp baking soda

1 tsp vanilla extract

½ tsp of maple extract

Filling:

2 cups of dates

1 cup of water

1 cup of sugar

1 cup of chopped pecans

½ cup of flour butter (mix ¼ cup of flour & ¼ cup of butter)

Directions:

Mix butter & brown sugar together.

Mix in eggs, vanilla, maple extract, flour, baking soda.

For the filling, cook all the ingredients together until well blended.  Let it cool completely.

As the filling cools, roll out the dough into a thin layer, and spread cooled filling on it. Roll it out like you would a jelly roll.  Wrap it up in plastic wrap and refrigerate overnight.

The next day, preheat the oven to 375 degrees.

Remove the rolled cookies from the fridge, remove the plastic wrap, and slice into ¼ inch slices.

Bake 10 to 12 minutes, or until slightly brown.
