Grilled Ginger-lime Chicken with Nectarines

Ingredients:
1 lb. of skinless, boneless chicken thighs
1 tsp of ginger paste
2 tbsp of white wine, divided
1 tbsp of packed, light brown sugar
2 tsp of finely grated lime zest
1 tbsp of freshly squeezed lime juice
1/2 tsp of chili sauce
Salt & pepper to taste
2 tbsp of vegetable oil
4 nectarines
¼ cup of freshly torn mint
Directions:
Pre-heat the BBQ grill to med-high (this should take about 5 minutes)
Toss the chicken with ginger, brown sugar, lime zest, lime juice, 1 tbsp of white wine and chili sauce. Season with salt and pepper.
Place the chicken on a grilling sheet and cook, turning occasionally until internal temperature reaches 165 degrees.
While this is cooking, or before starting the chicken grilling, make the dressing: Whisk 2 tbsp of water, remaining tbsp of white wine, 2 tsp of brown sugar, 1 tsp lime zest, 2 tsp of lime juice, and the vegetable oil.
Thinly slice the nectarines and add to the dressing along with the mint and ¼ tsp of salt.
Divide the nectarines and chicken among the plates and serve.
