Sicilian Cutlets

Ingredients:
2 lbs. of chicken cutlets
1 1/3 cups of breadcrumbs
1/3 cup of parmigano cheese grated
2 tsp dried parsley
2 tbsp of extra virgin olive oil
Salt & pepper to taste
1 lemon (juice + zest)
Directions:
Flaten cutlets in a freezer bag with the flat side of a mallet.
Toss chicken cutlets with the extra virgin olive oil, juice from 1 lemon, salt, and pepper.In a separate bowl, mix breadcrumbs, grated cheese, parsley, and a little more olive oil to keep it moist while baking.Coat each cutlet in the breadcrumb mixture and place on a parchment-lined baking sheet. Zest a little lemon on top and bake at 400°F for about 20 minutes.
