Slow Cooker Pork Stew

Ingredients:

1 cup of flour

2 tsp each of salt, pepper and dried thyme

5 lbs. of pork tenderloin cut into 2-inch cubes

4 tbsp of olive oil, divided

2 cups of chopped onion

1 cup of chopped carrots

1 cup of chopped celery

2 bay leaves

1 cup of white wine

8 cups of low sodium chicken broth

5 cups of large potatoes cubed

3 cups of diced parsnips

4 tbsp of softened, unsalted butter

4 tbsp of flour

Directions:

Mix the flour salt, pepper and Thyme in gallon freezer bag. Add the pork and coat.  Shake off excess.  In a large skillet, add oil and then the pork.  Cook over med-high heat, tossing until browned nicely (no need to cook completely).

Place the chopped vegetables into the slow cooker with the heat set to high.  Add the Pork, bay leaf, wine, chicken broth.  Cover the slow cooker and cook on high for 3 hours.  Turn the heat down to low and continue to cook for another 2 hours.

Mix the butter and flour.  Uncover the slow cooker and mix this butter mixture.

Place the slow cooker back on high and leave the cover off until the stew has thickened.

Dish out and serve!
