Stracciatella – Italian Soup

Ingredients:

40 ozs of chicken broth

4 eggs

Grated Lemon from 1 lemon

½ cup of freshly grated parmigiano cheese

Salt & pepper to taste

1 tsp of dried parsley flakes

Directions:

In a medium saucepan, bring the chicken broth to boil.  Lower temperature to medium-high.

In a medium bowl, whisk the eggs, grated lemon and cheese.

Slowly pour this egg mixture into the broth while whisking into the saucepan.

Continue whisking until the soup is smooth and there are no large clumps.

Serve in the parsley flakes and serve.
