Super Soft Chocolate Chip Cookies

Ingredients:
2 ½ cups of flour
1 tsp of baking soda
½ tsp of salt
1 cup of butter (2 sticks) at room temperature
1 cup of packed light brown sugar
1/3 cup of fruit sugar
1 ½ tsp of vanilla
2 large eggs (the eggs can be substituted with ½ cup of apple sauce or ½ cup of mashed banana)
2 cups of mini, semi-sweet chocolate chips
1 ½ cup of chopped walnuts (optional)
Directions:
Pre-heat oven to 350 degrees with rack 1/3 up in the oven. Prepare a cookie sheet with foil and then line it with parchment paper.
In a medium bowl, mix the flour, baking soda and salt. Set aside.
In a standing mixture, mix the butter, light brown sugar, vanilla and eggs.
Slowly mix in the flour mixture. Once it is all incorporated, add chocolate chips and walnuts if using.
Start forming the cookies into balls and place them on the prepared cookie sheet. Place them in the oven and cook for 12 minutes.
Caution: If you have additional cookies to bake, only bake them for 10 minutes or they will burn on the bottom.
Note: For double chocolate chip cookies, add ½ cup of cocoa and reduce the flour to 2 cups and increase fruit sugar to 2/3 cups.
