White Bean Soup

Ingredients:
2 tbsp olive oil
½ small, sweet onion chopped
1 large carrot chopped
2-3 celery sticks chopped
1 small container of grape tomatoes rinsed & halved
2 10oz cans of cannellini beans rinsed
4 cups of unsalted chicken broth
5 ozs of baby spinach
1 tsp of salt
½ tsp of pepper
¼ cup of freshly grated parmesan cheese
Directions:
Heat oil on medium heat in a large skillet that has a cover for later.
Add the onions, carrots, celery, tomatoes, salt, pepper and sauté for 5 minutes.
Add the broth and beans. Cover the skillet & lower the heat to simmer for 15 minutes.
Add the spinach and cover for 30 minutes.
Remove from the heat and sprinkle the parmesan cheese on top.
Serve warm.
