Amish Breakfast Casserole

Ingredients:

½ lb. bacon diced

1 medium chopped sweet onion chopped

6 large eggs lightly beaten

4 cups of hash brown potatoes thawed

2 cups of shredded sharp cheddar

1 ½ cups of full fat cottage cheese

1 ¼ cups of shredded Swiss cheese

Directions:

Pre-heat oven to 350 degrees.

In a large skillet cook bacon and onion over medium heat until bacon is crispy.  Drain in a thin wire colander.

In an electric mixer with a paddle attachment, mix the remaining ingredients on a med-low speed.  Stir in the bacon mixture.

Grease a 13X9 baking dish.  Pour the mixture into the pan and smooth out.

Bake uncovered for 40 minutes, or until the knife inserted in the middle comes out clean.  Let it stand for about 10 minutes before cutting and serving.
