Eggs in a Nest

Ingredients:

2 cups of frozen hash browns thawed

1/8 cup of melted butter

¼ tsp each of salt & pepper

1-2 slices of chopped prosciutto

2 tsp of maple syrup, plus additional syrup to drizzle on top of cooked egg dish.

4 large eggs

½ cup of shredded provolone cheese

Fresh thyme for garnish

Directions:

Pre-heat oven to 375 degrees.  Coat 2 ramekins with cooking spray.

Stir melted butter, salt and pepper into hash browns. Divide hash brown mixture among the two ramekins and press it on the bottoms and up the sides.  Bake in the oven for 25 minutes. 

While they are browning. Mix the prosciutto and maple syrup. Crack two eggs into each browned hash brown dish and sprinkle the prosciutto and grated cheese over the eggs. Bake for 10 minutes.  Leave on the lower rack and change the oven to the broil setting.  Broil for an additional 5 minutes. This will allow the whites to finish cooking.

Remove them from the oven; drizzle maple syrup and garnish them with fresh thyme and serve.
