Homemade Egg Salad Sandwiches

Ingredients:
6 hardboiled eggs
1/3 cup of mayo
¼ cup of light sour cream
1 tsp of salt (more as needed to taste)
¼ tsp of paprika
¼ tsp ground yellow mustard
½ tsp of chives
Directions:
Boil the egg the night before making it and refrigerate.
The next day, mix all the above ingrediencies in a food processor scraping down the sides as needed.
Use soft white bread. Butter the bread and fill it with the egg salad (dividing equally among the sandwiches. Top with another slice of buttered bread.
Once all the sandwiches are prepared cut them into rectangles.
Serve with your favorite side.
