Hamburger Steaks in a Sour Cream Sauce

Ingredients:

1 lb. of organic minced beef

Salt & pepper to taste

2 tbsp of butter plus extra

2 tbsp of finely chopped green onions

2 tbsp of cognac

1 cup of full fat sour cream

Salt & pepper to taste (in sauce)

Directions:

Shape meat into 3 oblong patties without working them too much so that they do not get tough. Season the patties with salt and pepper to taste.

Heat 1 tbsp of butter in a large skillet, then add the patties.  Cook them for 3-5 minutes per side.  Place the cooked patties on a platter and keep warm in a warming drawer.

Pour off any excess fat from the skillet. Add 1 tsp of butter to the skillet; toss in the chopped green onions.  Cook briefly then add the cognac. Cook for 2-4 minutes and add the sour cream and the remaining tablespoon of butter plus salt & pepper to taste. Reheat until combined. Move the sauce to a gravy boat.

Place the meat on a serving dish and drizzle the sauce over it.

Serve with your favorite vegetables.
