Beef Fondue

Ingredients:

3 lbs. of beef tenderloin

Enough peanut oil to fill an electric fondue pot 1/3 full

Salt & Pepper to taste

Dipping sauces Ingredients:

Horseradish sauce: 2/3 cups of light sour cream, 1/3 cup of mayonnaise, Horseradish to taste.

Curry sauce: 2/3 cups of light sour cream, 1/3 cup of mayonnaise, curry powder to taste.

Directions:

Cut beef tenderloin into one-inch cubes.  Place them in a plastic bag and season them with salt & pepper. Massage the meat to ensure the spices are incorporated throughout.  Place it in the fridge for at least 1 hour.

Mix each sauce into serving bowls with spoons for serving.

Provide each guest with two long fondue forks, a plate large enough to hold a cup of beef cubes and room for some sauce on the other side of their plate.  This allows each guest to cook their meat to their desired doneness.

Heat the oil to high and then turn down to medium. Place 2 pieces of meat on each fondue fork.  Remove the meat from the oil and remove the meat with a dinner folk.  Dip the meat in the desired sauce and enjoy!

Note: Removing the meat with a dinner fork allows the guest to put more meat in to cook while enjoying the one they just removed.
