Avocado Stuffed Deviled Eggs

This is a heathyer version of your typical deviled eggs.

Ingredients:

6 eggs

1 avocado

Bacon bits (about 3 strips)

1 tbsp + 1 tsp of mayo (I like avocado mayo)

2 tsp lime juice

1 pinch of cayenne

Salt & pepper to taste

1 serrano seeded & diced

 

Directions:

Boil the eggs to hard boil hard.

Peel and remove the yolks. (make sure you slice the eggs vertically before removing the yolks)

Mix the egg yolks plus all the above ingredients together except for the bacon serrano.

Pipe the mixed ingredients together into the vertically sliced egg whites.

Mix the bacon bits and diced serrano together.  Sprinkle this mixture on top of the deviled eggs.

 

Note: place the deviled eggs in an airtight container until ready to eat.  I would suggest eating them on the same day they are prepared because avocado tends to darken fairly quickly once exposed to air.
