Black Bean & Pepper Jack Quesadillas

Ingredients:
1 15oz can of black beans
1 cup of pepper jack shredded cheese
1 cup of salsa divided
4 8-inch tortillas
1 tbsp of vegetable oil
1 ripe avocado diced
Directions:
Combined the beans, cheese and ½ cup of salsa in a bowl. Place the tortillas on your work surface. Spread the bean mixture evenly among the 4 tortillas. Flod the tortillas in half and press the edges with a fork.
In a large skillet, pour in the oil and spread to cover the surface. Place the 4 tortillas in the skillet and cook on med-high only turning once until each side is golden brown. As they cook, continue to press the edges to ensure they stay closed, and you do not lose the bean mixture.
Serve the tortillas topped with the other half of the salsa and the diced avocado.
