Mexican Egg Casserole

Ingredients:
6 eggs, beaten
2 tbsp of soften butter
¼ cup of flour
½ tsp baking soda
1 cup of low-fat cottage cheese
1 cup of shredded Monterey jack cheese
¼ cup of chopped jalapenos
Directions:
In a large bowl, combine eggs, butter, flour, and baking soda. Beat on medium speed until well combined.
Stir in remaining ingredients.
Pour into a 8X11.5 inch greased casserole dish and bake at 400 degrees for the first 10 minutes. Reduce the temperature to 350 degrees and bake 20 additional minutes or until golden.
Serve warm.
