Mexican Club Sandwich

ngredients:

3 strips of cooked sliced bacon

4 7” flour tortillas

1 cup of shredded butter lettuce

8 oz of deli sliced turkey

3 slices of pepper-jack cheese

1 tomato sliced

2 tbsp of salsa

1 cup of guacamole (1 smashed avocado, 1 chopped serrano, 2 tbsp chopped cilantro, juice of 1 lime, 1 chopped tomato, 1 dollop each of mayo & sour cream, salt and pepper to taste)

Directions:

Per-heat broiler with rack 6 inches from element.

Cook the bacon in a skillet. Transfer the bacon to a paper towel lined plate.

Brush the undersides of the tortillas with olive oil and transfer to a foiled line baking sheet. Broil 1-1 1/2 minutes per side.

To assemble, spread guacamole on 2 of the tortillas and top with lettuce.  Place the turkey and cheese on one of the two tortillas, then stack the second tortillas on top. Layer the bacon , tomato and additional lettuce on top. Add the 4th tortilla and additional guacamole.  Add salsa, additional turkey and Top with last tortillas.  Place the sandwich picks in the 4 corners.  Cut and serve.
