Caprese Chicken Foil Packs

These are very moist, flavorable and tender


Because these are done on the BBQ in closed foil packs, there is no mess to clean up and you can also eat them right out of the pack.

Serves 2: Simply double or triple the recipe for a larger crowd.

Ingredients:

2 boneless chicken thighs (you can also use chicken breasts or tenders)

Salt & Pepper to taste

2 cups of grape tomatoes halved

2 tsp olive oil

¼ cup pesto

4ozs sliced mozzarella

Balsamic glaze for drizzling

Instructions:

1.      Season chicken with salt & pepper

2.      Make foil pockets big enough to seal up once all the ingredients are in, ensuring enough room to avoid hitting the cheese with the foil.

3.      Divide tomatoes among packets.  Drizzle with 1 tsp olive and salt & pepper to taste.

4.      Place chicken in each packet

5.      Spread pesto over chicken (about 1/8 cup on each)

6.      Fold foil packets to seal, while avoiding the foil touching the cheese

7.      Pre-heat the BBQ to med/high for about 5 mins

8.      Grilled covered, rotating the packets halfway through

9.      Ensure the thickest part of the chicken measures 165 degrees

10.   Carefully open packets and drizzle with balsamic glaze
