Slow Cooker Curry Chicken With Vegetables

Ingredients:
1 (13.5 oz) canned coconut milk
4 tsp of curry powder
¼ cup of chopped basil
2 tbsp of lime juice
2 lbs. of boneless, skinless chicken breasts cut into 1 ½ inch pieces
½ tsp each of salt & pepper
1 bunch of green onions chopped
4 cups of broccoli
2 cups of green beans
2 small zucchinis cut into ½ inch half-moons
1 (14 oz) can of baby corn drained.
Directions:
Pre-heat slow cooker on high.
In a small bowl, whisk together the coconut milk with the curry powder and set aside.
Add the chopped chicken to the slow cooker. Add all the vegetables, salt and pepper to it with the exception of the broccoli. Cover and cook for 4 1/2 hours add the broccoli and cook for 1 hour then add the coconut mixture to the slow cooker.
Cook for an additional 30 minutes.
Serve warm.
