Cheesy Protein Egg Casserole

Ingredients:
6 large eggs
2 cups ricotta cheese
1 cup shredded Swiss cheese
1 cup chopped spinach
½ cup diced roasted red pepper
½ cup chopped onion
½ teaspoon onion powder
½ teaspoon salt
¼ teaspoon black pepper
1 tbsp dried parsley
Sliced tomatoes and avocado for garnish
Directions:Preheat oven to 350°F. Grease 9x8-inch baking dish.Whisk eggs in a standing mixer. Stir in ricotta cheese until incorporated.Mix in spinach, bell pepper, onion, and seasonings until combined.Fold in shredded cheese, reserving some for topping.Pour into dish, top with reserved cheese. Bake 45 minutes until set and golden.
Cool 5 minutes before slicing. Garnish with tomatoes, and avocadoes if desired.
