Hamberger Steaks in a Sour Cream Sauce

Ingredients:
12 ounces of organic ground beef
Salt and pepper to taste
2 tbsp butter
1 tbsp of olive oil
2 tbsp of chopped shallots (greens only)
2 tbsp of brandy
1 cup of light sour cream
Directions:
Shape meat into two oblong patties. Season both with salt and pepper. Heat 1 tbsp of butter with 1 tbsp of olive oil in a skillet. Cook patties on med-high until the internal temperature reaches 165 degrees. Remove from the skillet and place on a oven proof serving dish in a warmer drawer. Remove excess fat from the skillet.
Add the remaining butter and chopped shallots greens to the skillet. Cook for 1-2 minutes and add the brandy followed by the sour cream. Salt and pepper the sauce to taste. Heat through.
Remove the beef steaks from the warmer drawer and pour the sauce over them.
Garnish with dried parsley and paprika.
I like to serve them with French style green beans.
