Oven Baked Egg Bites

There is not a lot of contrast in this picture, but since there is cottage cheese in the egg bites, pairing it with some cold cottage cheese is a good complement.

Servings: 12

Ingredients:

8 eggs

1 ½ cups of full fat cottage cheese

1 tsp salt

6 strips of cooked bacon chopped

2/3 cups of shredded gruyere cheese

 

Directions:

Preheat oven to 350 degrees.  Place one of the oven racks in the middle third of the oven. Spray a 12-slot muffin pan with oil.

Add eggs, cottage cheese and salt to a blender & blend until the mixture is smooth.

Divide the chopped bacon evenly to the muffin pan slots, top with the gruyere cheese in the same fashion.

Pour the egg mixture into the muffin pan slots.

Place a cookie sheet in the bottom on the bottom rack of the oven being careful not to burn yourself.

Boil a pot of water on the stove and then pour it into the cookie sheet until it is about halfway up the sides.

Place the muffin tin on the middle third rack of the oven.

Bake for 25 minutes.  Remove from the oven and wait until the cookie sheet is completely cooled before removing it. 

Allow the egg bites to cool slightly before removing this from the muffin pan.
