Baked Beans

Ingredients:

5 slices of thick, cooked bacon cut in thirds

3 slices of bread torn

1 small, sweet onion chopped & sauteed until soft

1 tbsp of minced ginger2 ½ tsp chili powder

1 15oz can of crushed tomatoes

3 tbsp of molasses

1 tbsp of low-sodium soya sauce

1 tbsp of apple cider vinegar

1 tsp of mustard powder

Salt & pepper to taste

2 15 oz cans of pinto beans drained and rinsed

1 15 oz can of navy beans, undrained

 

Directions:

Place bacon in a food processor and pulse to large crumbles.  Add the torn bread to the processor and continue to pulse until both are small crumbles. 

In the meantime, add the remaining ingredients to a Pyrex dish that has a cover. Hand mix this well with a serving spoon.  Top this with the crumbled bacon/bread mix, covering the bean mixture evenly.  Bake in a 375-degree oven with the cover on for 45 minutes. Uncover and bake for 5 more minutes.

Serve hot.
