Delicious Mashed Potato Casserole

Mashed Potato Casserole is a crowd-pleasing dish that’s perfect for any holiday meal or family gathering. Its creamy texture and rich flavors make it a favorite side dish that pairs well with a variety of main courses. This recipe is easy to prepare and can be made ahead of time.

Ingredients:

  • For the Casserole:

    • 5 pounds russet potatoes, peeled

    • 1/2 cup salted butter, melted

    • 1 package (8 ounces) cream cheese, softened

    • 1 cup sour cream

    • 1/2 cup milk

    • 1 small onion, finely chopped

    • 1 teaspoon salt

    • 1/2 teaspoon black pepper

    • 1 cup shredded cheddar cheese

  • For the Topping:

    • 1/4 cup melted butter

    • 1/4 cup grated Parmesan cheese (optional)

    • 1/4 teaspoon paprika (optional)

  • Instructions:

    1. Preheat the Oven: Preheat your oven to 350°F (175°C).

    2. Cook the Potatoes: Place the sliced potatoes in a large pot and cover with water. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15-20 minutes. Drain the potatoes and return them to the pot.

    3. Prepare the Mashed Potatoes: Mash the potatoes until smooth. Add the melted butter, cream cheese, sour cream, milk, chopped onion, salt, and black pepper. Mix until well combined and creamy.

    4. Transfer to Baking Dish: Spread the mashed potato mixture evenly into a greased 9x13-inch baking dish. Sprinkle the shredded cheddar cheese over the top.

    5. Prepare the Topping: If using, add the grated Parmesan cheese and paprika. Sprinkle the topping evenly over the casserole.

    6. Bake: Bake in the preheated oven for 30-35 minutes, or until the casserole is bubbly and the top is golden brown.

    7. Serve: Allow the casserole to cool slightly before serving. Enjoy!
