Mashed Potato Casserole is a crowd-pleasing dish that’s perfect for any holiday meal or family gathering. Its creamy texture and rich flavors make it a favorite side dish that pairs well with a variety of main courses. This recipe is easy to prepare and can be made ahead of time.

Ingredients:
For the Casserole:
5 pounds russet potatoes, peeled
1/2 cup salted butter, melted
1 package (8 ounces) cream cheese, softened
1 cup sour cream
1/2 cup milk
1 small onion, finely chopped
1 teaspoon salt
1/2 teaspoon black pepper
1 cup shredded cheddar cheese
For the Topping:
1/4 cup melted butter
1/4 cup grated Parmesan cheese (optional)
1/4 teaspoon paprika (optional)
Instructions:
Preheat the Oven: Preheat your oven to 350°F (175°C).
Cook the Potatoes: Place the sliced potatoes in a large pot and cover with water. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15-20 minutes. Drain the potatoes and return them to the pot.
Prepare the Mashed Potatoes: Mash the potatoes until smooth. Add the melted butter, cream cheese, sour cream, milk, chopped onion, salt, and black pepper. Mix until well combined and creamy.
Transfer to Baking Dish: Spread the mashed potato mixture evenly into a greased 9x13-inch baking dish. Sprinkle the shredded cheddar cheese over the top.
Prepare the Topping: If using, add the grated Parmesan cheese and paprika. Sprinkle the topping evenly over the casserole.
Bake: Bake in the preheated oven for 30-35 minutes, or until the casserole is bubbly and the top is golden brown.
