Roasted Vegetables

I like to mix it up and put half a sweet onion and half a red onion.

Ingredients:

 1 large butternut squash

3 medium parsnips

3 large carrots

1 sweet onion

Salt & pepper to taste

1 tbsp nutmeg

Directions:

Line a large cookie with parchment paper and pre-heat the oven to 375 degrees.

Cut all the vegetables into bite size chunks.  Add them to a large mixing bowl.

Pour 2/3 cups of olive oil into the bowl and season with salt & pepper to taste.  Add a generous amount of nutmeg (about 1 tbsp spoon).

Mix this together completely.  Pour the spiced/oiled vegetables onto the cookie sheet and spread out as much as possible.

Bake in the oven for 60 minutes and serve with your favorite main dish.
