Egg Fried Rice

I like to serve this side dish with Teriyaki as pictured here.

Ingredients:

1/2 cup of basmati rice + 1 cup of chicken broth cooked according to instructions

2 ½ tbsp of light soy sauce

½ tbsp of sesame oil

4 eggs beaten

2 tbsp of olive oil

2 tbsp of chives

Directions:

Heat olive oil in a saucepan and add the beaten eggs until still moist. Make sure there are no large clumps.

Add the cooked rice to the pan.

Add the soy sauce and sesame oil.
