Marinated Spicy Chicken

Ingredients:

1 lemon zested & juiced

1 ½ cups of plain whole-milk Greek yogurt

½ cup of mayonnaise

2 tbsp of dried dill

1 tbsp of onion powder

1 tbsp of Chipotle hot sauce

1 tsp of ground black pepper

2 tsp of white sugar

2 tsp of salt divided

2 lbs. of thin sliced boneless, skinless chicken breast (cutlets)

Enough olive oil to cover a non-stick grill pan

Coarsely chopped chives

Directions:

In a large bowl mix together the lemon zest, juice, yogurt, mayonnaise, dried dill, onion powder, hot sauce, pepper, sugar, and 1 tsp of salt until smooth.  Measure out ½ of the mixture and set aside, covered in the fridge.

Season remaining marinate with additional teaspoon of salt.

Add the chicken and marinade to a large freezer bag and massage the bags contents to ensure chicken is completely engulfed.  Place this in the fridge.  Occasionally massage the bag contents while it is marinating in the fridge until ready to cook in the grilling pan.

Oil the grilling pan. Carefully remove the chicken from the bag, letting excess marinate off the chicken and place each piece in the pan.

Cook chicken for about 5 to 10 minutes per side or until the internal temperature reaches 165 degrees.
