Omelet with Goat Cheese and Chives

Ingredients:

8 large eggs

2 tbsp of butter

1 bunch of sliced green onions

4 ozs of crumbled goat cheese

Salt and pepper to taste

Directions:

Melt butter on low in a skillet that has a cover.

While the butter is melting, cook the green onions on low while beat the eggs on high for 5 minutes.  Turn the heat up to medium and add in the beaten eggs.  Cover the skillet and cook until the eggs are partly cooked.

Turn on the broiler with the oven rack on the middle rack.  Place the frying pan (cover off) under the broiler for 3 to 5 minutes until the top is slightly golden.  Remove from the oven.

Sprinkle the goat cheese over the eggs gently fold the omelet in half. Place the cover back on the pan for 2 minutes.  

Move the omelet to a serving dish and serve with fresh vegetables.

Serve warm.
