Turkey Chili

Ingredients:
2 tbsp olive oil
1 lb. of ground turkey
½ onion chopped
2 leeks chopped
1 tbsp chili powder
1 tbsp cumin powder
1 1/2 tsp dried oregano
1 1/2 tsp paprika
2 pkg organic madras lentils
2 cans of kidney beans
1 14.5 oz can of crushed tomatoes
¼ cup of red wine
1 tsp salt & pepper
Sour cream or Cottage Cheese & Shredded cheddar cheese for garnish
Directions:
Place a large frying pan on the stove and add the olive oil.
Turn the heat onto high and add the turkey. Crumble it into small pieces while stirring.
Add the onion and leeks. Turn the heat down to medium while continuing to cook and stir.
Stir in the chili and cumin distributing the seasoning throughout the mixture.
Add the lentils, kidney beans and crushed tomatoes while stirring occasionally.
Stir in the wine, salt & pepper.
Turn down the heat to low, and cover. Cook for another hour, stirring occasionally.
Serve into bowls and add a dollop of cottage cheese or sour cream and sprinkle with cheddar cheese.
