Ingredients:

¼ cup of butter (1/2 of a stick)

¼ cup of all-purpose flour

1 ½ cups of whole milk

1 tsp of salt

¼ tsp of pepper

¼ tsp of Dijon mustard

½ tsp of nutmeg

8 slices of sandwich bread

6 ounces of uncured ham

6 ounces of gruyere cheese grated

¼ cup of grated parmesan cheese

Directions:

Melt the butter in a saucepan over medium heat. Whisk in the flour, ensuring no lumps remain for about 2 minutes. Gradually add in the milk and continue stirring until the mixture is smooth and well thickened. Remove from the heat and add in the salt, pepper, nutmeg and mustard.  Cool off in the fridge for 30 to 60 minutes.

Per-heat the oven to 425 degrees. Line a baking sheet with parchment paper.

Place 4 slices of bread with a generous amount of bechamel sauce the cooled in the fridge.  Tope with ham, gruyere cheese and parmesan cheese.

Place the remaining 4 slices of bread and top with the remaining bechamel adding the remaining ham, gruyere and parmesan on top.

Bake for 5-7 minutes until the cheese is melted. Leaving the oven rack as is, turn on the broiler and broil for 3-4 minutes until the top is golden.
