Homemade Pasta Directions: (3 days before make the pasta, for a lasagna and cut extra into wide strips and placed on a cotton tablecloth (large enough to fold over and dry for 3 days).
Pasta Ingredients:
2 1/3 cups of all-purpose flour
1/2 tsp of salt
3 beaten eggs
1/3 cup of water
1 tbsp of extra virgin olive oil
Pasta Directions:
Place all ingredients in an electric mixer with a dough attachment.
Mix on low for 6-8 minutes. If you still see dry ingredients not mixed in halfway through the time, add an extra 1 tbsp of oil (only if needed.
Once the 8 minutes of mixing is complete, carefully remove the dough from the mixer (the dough should be smooth and elastic).
Move to a lightly floured large cutting board and cover with a tea towel and let it sit for 10-15 minutes.
Remove the tea towel and cut into ¼ cup pieces. Roll each piece into 4-inch logs and cover with the tea towel. Let rest for an additional 10-15 minutes.
Remove the dough attachment from the mixer and attach the wide lasagna attachment.
Start rolling the dough pieces through this attachment at level 1 placing each on a floured surface. Continue this process through each level (2 to 5).
Once partially dried, remove the wide attachment and replace it with the pappardelle attachment.
Place a cotton tablecloth on a clean surface.
Move each piece of the lasagna noodles through the attachment and onto the tablecloth, using only half on the tablecloth. Once they are all complete, fold the other half of the tablecloth over the pappardelle and carefully move them to a convenient location. Let it dry for 3 to 5 days.
Once dried out place in a large pot of boiling water, salted water for about 10-12 minutes.
Pour the pasta into a strainer and move to a pasta bowl. Pour in some of the meat sauce. Incorporate some parmesan cheese.
Place some extra sauce into a gravy bowl and place on table. Place additional cheese into a cheese bowl and place on the table alongside of the sauce with the pasta bowl in the middle of the table. This allows guest additional sauce and/or cheese to their liking.
Enjoy!
