Pasta with Sausage in a White Wine Cream Sauce

Ingredients:

1 lb. of uncooked bow tie pasta

2 tbsp of extra virgin olive oil

1 sweet onion finely chopped

1 ½ lbs. of Italian sausage

12 oz of thinly sliced mushrooms

1 cup of white wine

½ cup of finely chopped parsley

2 cups of heavy cream

1 cup of freshly grated parmesan cheese

Salt & pepper to taste

Directions:

Add oil to a large skillet (equipped with a cover) over medium heat.  Stir in the onions and mushrooms.  Cook until mushrooms are slightly browned. Remove skins from the sausage and crumble into the skillet same skillet.  Cook until the sausage is cooked through. Add the wine and parsley.  Continue cooking for an additional 5 minutes.

Cover and turn down the sausage mixture to low.

Bring a pot of salted water to a boil; add pasta and cook according to the instructions.

Add the cream to the sausage mixture followed by the cheese. Increase the heat to medium and stir until completely incorporated.

Drain the paste and return it to the pot. Add the sausage mixture to the drained pasta. Fold in the mixture, place in a pasta bowl and garnish with additional parsley and cheese.
