Hot Chocolate Cookies

Ingredients:
1 cup of flour
½ cup of cocoa powder
¼ cup of corn starch
2 tbsp of buttermilk powder
½ tsp ground cinnamon
¼ tsp baking soda
1 cup of light brown sugar
½ cup of softened butter (one stick)
2 large eggs
2 tsp of vanilla extract
4 oz of 72% cacao dark chocolate chunks
3 tbsp of marshmallow fluff
Directions:
Place an oven rack up by 1/3 and pre-heat oven to 350 degrees.
Sift flour, cocoa powder, corn starch, buttermilk powder, cinnamon, and baking soda. Set aside.
Using an electric mixer on medium speed, beat the brown sugar and butter until fluffy (about 3 minutes).
Add eggs, one at a time, beating after each addition.
Reduce speed to low and add in half of the dry ingredients. Add the remaining dry ingredients.
On a parchment lined large cookie sheet, spoon one large tablespoon of dough on the sheet leaving two inches between each cookie dough. Using a small spoon, dollop on marshmallow fluff and swirl slightly.
Place in the pre-heated oven and cook for 6 minutes. Rotate the cookie sheet and cook for an additional 6 minutes.
Remove it from the oven and rest for 5 minutes. Move the cookies to a cooling rack and cool completely.
Store cookies in an airtight container. Eat within 5 days or freeze for consumption at a later date.
