Soft and Chewy Oatmeal Chocolate Chip Cookies

Ingredients:

3 cups of oatmeal

1 cup of flour

½ tsp baking soda

½ tsp of salt

¾ cups of butter at room temperature

1 cup of sugar

¼ cup of fruit sugar

1 ½ tsp of vanilla

1 large egg

¼ cup of water

1 ¼ cups of chopped walnuts

1 cup of chocolate chips

Directions:

Pre-heat oven to 350 degrees with one of the racks 1/3 up from the bottom of the oven. Prepare a large cookie sheet with parchment paper.

In a medium bowl mix together the dry ingredients and set aside.

In an electric mixer on medium speed, cream together butter, both sugars, vanilla, egg, and water.

Turn the mixer down to med-low and slowly start adding in the dry ingredients and mix until incorporated.

Turn the mixer down to low speed and add in the walnuts and chocolate chips just until incorporated.

Spoon the dough onto the prepared cookie sheet and bake for 12 to 17 minutes depending on how many cookies you bake at a time.  Remove from the oven and let the cookies rest for 10 minutes.  Move the cookies to a cooling rack.

Place in an airtight container.  Eat with 5 days or freeze for later.
