Spiced Salmon with Cocoa

Ingredients:

½ cup of orange juice

4 4oz salmon filets1 tbsp of packed light brown sugar

2 tsp of white sugar

1 tsp of unsweetened cocoa powder

¼ tsp of cayenne pepper

¼ of ground cinnamon

¼ tsp salt

¼ tsp pepper

1 navel orange thinly sliced

4 tbsp of melted butter

Directions:

Pre-heat oven to 400 degrees.

Place the orange juice in a shallow bowl, then add the salmon skin side up.  Let it sit a room temperature for 15 minutes.

In a small bowl mix together both sugar, cocoa, cayenne, cinnamon, salt and pepper.

Place the salmon on a parchment lined baking sheet, skin side down.

Sprinkle the spice mixture evenly across the salmon pieces. Add an orange slice on top of each salmon filet. Brush each with the melted butter. Bake for 20-25 minutes or until the flake easily with a fork.

Serve warm with your favorite vegetable side.
