Tuna Salad with Hummus

I make my own hummus.  The recipe can be found below if you so choose to make your own.

Ingredients:

10 to 14 ozs. of canned albacore solid white tuna packed in water

½ cup of sundried tomatoes finely chopped

1/3 cup of celery finely chopped

¼ cup of green onions finely chopped (green parts only)

3/4 of hummus

1-2 tbsp of stone ground mustard to taste

2 tbsp of dill relish

Salt & pepper to taste

Directions:

Drain the water from the tuna and place in a large bowl. Add all of the ingredients to the mixing bowl.

Mix until well combine and all ingredients are evenly distributed.  Add additional ingredients from above to your taste.

Enjoy tuna salad to bread to make a sandwich or in a lettuce wrap.

¼ cup cashew butter

¼ cup of freshly squeezed Lemon

2 tbsp filtered water (additional 1 tbsp if needed)

1 tbsp of olive oil

½ to 1 tsp of sea salt to taste

¼ tsp black pepper

1 19 oz can of chickpeas rinsed and drained

Hummus Directions:

Add all the ingredients to a food processor except the chickpeas and blend for 1 minute. Add the chickpeas and process for 1 minute.  Scrape down the sides and process for another 3 minutes or until smooth. If it appears a little too thick, add the additional tablespoon of water add process until combined. Add lemon juice and salt to taste.
