Strawberry Chicken Salad

Servings: 2-3 as a full course meal

Ingredients:

Salad

¼ cup of sliced almonds

16 ozs of strawberries cleans, stems removed and sliced

2 cups of skinless, deboned chicken breast, cooked and cut into bite size pieces

5 ozs of baby red butter lettuce

1 sliced avocado

 

Dressing

1 tbsp of white sugar

¼ cup white vinegar

¼ cup of olive oil

1 tsp salt

1 tsp of grounded dry mustard

½ tsp of dried onion powder

1 tbsp poppy seeds

 

Instructions:

Buy baby lettuce that is already cleaned and ready to use.

Buy already slivered almonds.

Clean and cut strawberries into slices.

Cut avocado in half and discard the pit.  Remove avocado from skin and slice lengthwise.

Cook chicken and cut it into bite size pieces.

Place all the salad ingredients into a large bowl.

For the dressing, combine

all of the dressing ingredients into a 2-cup liquid measure and stir until completely incorporated.

Pour the dressing into the salad mixture, toss and serve.
